When I was at Meijer yesterday (groceries are so expensive, sigh), I picked up a package of bulgur wheat. I've had tabbouleh before, but was never a big fan--too parsley-y for my taste. But it was cheap, much cheaper than quinoa, so I decided to give it a shot.
I cooked some up today to add to my tomato/cucumber/red onion/chickpea/olive oil/red wine vinegar/pita chip salad, and it was pretty nice. Kind of like rice or couscous. It was a bit of overkill, though: the chickpeas AND the bulgur AND the pita chips. I'll try it with something else next time. Hmmm . . . there's leftover steak & green beans in the fridge . . .
I'm trying to think of other things I can do with it besides throw it in salads, and found a couple ideas.
Bulgur with Ginger and Orange This looks like it would be good beside a pork chop or even salmon.
Cranberry Bulgur Wheat Pilaf Cranberries = yum
Herbed Bulgur-Lentil Pilaf This is an Ellie Krieger recipe, whose recipes always look good to me. The lentils will make it a harder sell to the family. I'll have to put it with something they really like. Like biscuits & gravy.
