Experimental Dinner

I like trying new recipes. I don't usually try four new recipes at one crack, but these all looked good and reasonably easy.

Slow Cooked Pork Carnitas (Mexican Pulled Pork)
Cuban Style Black Beans
Chipotle's "Skinny" Cilantro Lime Rice
Corn Salsa with Lime

They were all good, and reasonably easy, but after a day of hacking up plants, just breathing was an effort.

I also let the kids each get a bottle of Mexican soda, which they loved. I still have most of a can of chipotle chilies in adobo sauce--I think I can get Jeff to take some in with leftovers for lunch next week, but I don't know what to do with the rest of them. There is a TON of meat left, and a fair bit of everything else. I will definitely make this meal again sometime, and I was reminded of how easy pork roast in the slow cooker is. That's going to show up a lot more frequently this fall, especially if I can come up with some good flavor combinations.

So far, I really like Gina's Skinny Recipes. There are new posts pretty much every day, and many of the recipes look very appealing. It's one of the few websites I'm still bothering to check daily. I still love Pioneer Woman, but I can't cook that way as often right now.
