Zucchini Fries

I don't know where I saw the idea for zucchini fries, but it sounded good, and we have some zucchini to use up. I didn't have the dry bread crumbs that the recipe called for, so I toasted and pulverized some wheat bread. I think next time I'll wait until I have actual dry crumbs, or take the time to dry the fresh crumbs in the oven. My crumbs were too soft and didn't stick well. I ended up sprinkling the extra over the top.

I cut up a pound of zucchini, dipped the pieces in one egg beaten with a little water, then breaded them with the crumbs from two slices of wheat bread mixed with a quarter cup Parmesan cheese. I put them on a baking dish and baked at 450 degrees for about 20 minutes. When it came out of the oven, it was even more obvious that the fresh bread crumbs were a bad choice. They got a little over brown in places. Still, I ate them up (about half the pan) and enjoyed them.  You get a substantial amount of food for not a lot of calories, and that does count for something in my book.
