Last night was a throwback to the 70's at our house. I'd planned to make grilled pork chops, which is pretty standard around here. Jeff mentioned how much he loved it when his mom made pork chops smothered in cream of mushroom soup when he was a kid. I reminded him that I'm always looking for suggestions and requests on what to make for dinner. "Yeah, with mashed potatoes." I wasn't planning to make it until next week (this kind of recipe wants bone in chops, and boneless are all I have in the freezer), but since we were at Meijer yesterday anyway, I got the meat & soup.
It really is super easy to make: brown the chops, add the soup and a can of milk, and let simmer for a few hours. The meat ended up being tender and delicious, although the pan I used was a little too small and they couldn't lay flat the whole time. Mashed potatoes, salad and roasted butternut squash rounded things out.
Jeff & Lauren loved it. Sarah didn't like it at all. I thought it was tasty, but I know the fat & sodium made it a poor choice.
As a matter of fact, I've had a lot of poor food choices this week. I had Middle Eastern food Friday night, pizza Saturday, and Burger King for breakfast Sunday. Then last night. None of those days was off the charts terrible. But in combination, as a trend, it's bad news.
Today's plan is simple: oatmeal & applesauce with a glass of milk for breakfast (done), leftover jambalaya for lunch, and food that I can eat in the car between classes for dinner. No, not drive-thru. An apple, string cheese, almonds, and a Skinny Cow chocolate bar.
Tomorrow's weigh in won't be pretty, but it's not going to bother me, because I know I'm back on track. It is eye-opening to see how quick and easy it is to veer off course, though.
