I made the biscuits from CI Best Light Recipe last night, and was pretty satisfied with how they turned out. They were considerably more work than my mom's biscuits, and somewhat smaller, but still light, fluffy and tasty. And for 150 calories each, I ended up having two.
When I asked what everyone thought, Jeff said that the true test of a biscuit was putting sausage gravy over the top. I laughed, because ANY biscuit is tasty when it's slathered in yummy sausage gravy!
End result? I'll continue to make them. That's another one to put in the "win" column for this cookbook.
